Short answer
A kitchen knife blade is made by shaping steel — either forged from a billet or cut from rolled sheet — then hardening it, tempering it and grinding the edge. On most Japanese-steel knives a hard core steel is laminated between softer outer layers, a construction called san-mai. That core is what cuts; the cladding, including a Damascus pattern, is there for toughness and looks.
Pick up a good chef knife and you are holding the result of several deliberate decisions: which steel, how hard to run it, whether to laminate it, and how to grind it. Those decisions are the difference between a blade that holds an edge for months and one that goes dull by Wednesday.
Here is what actually happens, and — more usefully — what each choice means when you are standing in front of a knife deciding whether to buy it.
What are knife blades made from?
Almost every kitchen blade is steel: iron alloyed with carbon, plus other elements that tune its behaviour. Carbon content and heat treatment set how hard the steel can be made; chromium, at roughly 11 per cent or more, is what makes a steel stainless.
That gives you the central trade-off:
- Non-stainless high-carbon steel takes an extremely fine edge and is easy to bring back on a stone. It will also stain and rust if you leave it wet, so it needs drying immediately after use.
- Stainless steel resists corrosion because of its chromium content. Cheap stainless is soft and dulls quickly, but modern high-performance stainless alloys such as VG10 and AUS-10 combine genuine edge retention with everyday practicality. - Ceramic blades are extremely hard and never rust, but they are brittle. Drop one, or twist it in a dense vegetable, and it chips or snaps. They also cannot be resharpened at home.
Hardness is measured on the Rockwell scale, and most quality kitchen blades land between 58 and 62 HRC. Above that the edge lasts longer but chips more readily; below it the knife is forgiving but needs sharpening more often.
Japanese layered steel: san-mai and ni-mai
Making steel harder makes it hold an edge better — and also makes it more brittle. Laminating the blade is the elegant way round that problem, and it is the standard construction on Japanese-steel kitchen knives.
San-mai means three layers. A hard core steel is forge-welded between two softer, tougher outer layers. The core reaches the edge and does the cutting; the cladding absorbs shock and stops the brittle core cracking. You get the edge retention of hard steel with much of the toughness of soft steel.
Ni-mai means two layers, and is the equivalent construction for single-bevel knives: a hard cutting layer backed by one softer supporting layer, ground so the hard steel forms the whole of the edge.
Honyaki blades take the opposite approach — a single piece of hard steel, no cladding, differentially hardened so the edge is harder than the spine. They can take a remarkable edge, but they are difficult to make, unforgiving in use and expensive, which is why laminated blades dominate. Damascus is a cladding, not a steel
This is the single most common misunderstanding in knife shopping, so it is worth being blunt about it.
Modern Damascus is pattern welding: many layers of contrasting steel forge-welded together, folded, then acid-etched so the boundaries between layers show as those rippling waves. On a kitchen knife, that patterned material is the cladding wrapped around a hard core — commonly VG10 or AUS-10.
Which means the layer count on the box tells you almost nothing about how the knife cuts. A 67-layer Damascus knife and a plain san-mai knife with the same core steel and the same heat treatment will hold an edge equally well. What Damascus genuinely gives you is the pattern, a slightly reduced tendency for food to stick along the flat, and the corrosion resistance of whatever the outer layers are made of. Forged or stamped?
Blades reach their shape one of two ways. A forged blade is heated and shaped under force from a billet of steel, which allows a thicker spine, an integrated bolster and a distal taper from heel to tip. A stamped blade is cut from rolled sheet steel and then ground and finished.
Forging is often used as a shorthand for quality, and it does enable geometry that stamping cannot. But heat treatment matters more than either: a well-hardened stamped blade will out-cut a badly hardened forged one. Our comparison of forged vs stamped blades covers the practical differences.
After shaping comes the part that actually decides performance: the blade is hardened by heating and quenching, then tempered at a lower temperature to remove brittleness, then ground, and finally sharpened.
What this means when you are buying
Three questions get you most of the way:
- What is the core steel? This is the number that predicts how the knife cuts. VG10, AUS-10 and similar are dependable modern choices.
- What hardness is it run at? 58–62 HRC is the sensible band for a kitchen knife.
- Is it laminated? San-mai gives you a hard edge with a tough body — the right answer for almost every home cook.

No. Modern Damascus is a pattern-welded cladding made by forge-welding many layers of contrasting steel and then etching them to reveal the pattern. The cutting edge comes from the hard core steel underneath, so a Damascus knife performs according to its core, commonly VG10 or AUS-10, not according to the number of layers.
Is a harder blade always better?
No. Hardness is measured on the Rockwell scale and most quality kitchen knives sit around 58 to 62 HRC. Harder steel holds an edge longer but is more brittle and chips more easily on bone or frozen food, and it takes more work to resharpen. The best blades balance hardness against toughness rather than chasing the highest number.
What is the difference between forged and stamped blades?
A forged blade is shaped from a heated billet of steel under force, then ground and heat-treated. A stamped blade is cut from rolled sheet steel and then finished. Forging allows a thicker spine, a bolster and a distal taper, but a well heat-treated stamped blade can cut just as well; the heat treatment matters more than the method.
What is honyaki?
Honyaki blades are made from a single piece of hard steel with no softer cladding, then differentially hardened so the edge is harder than the spine. They can take an exceptionally fine edge but are unforgiving, difficult to make and expensive, so they are rare compared with laminated blades.
