But there are five main ways to sharpen a knife, and they are not equal. The right choice depends on your blade, your budget and how much control you want over the edge.

A whetstone is a flat abrasive block you draw the blade across at a set angle. 2. Pull-through and carbide sharpeners

A pull-through sharpener has a slot with a fixed carbide or ceramic V that you drag the blade through. It is cheap, quick and needs no skill — you cannot get the angle wrong because the angle is preset. The problem is that same fixed V: it scrapes away a lot of steel in one aggressive pass and forces every knife to its own angle rather than your blade's. On a soft Western knife that is a reasonable everyday fix. On a hard, thin Japanese edge it is far too coarse and can leave the edge ragged or chipped.

3. Electric sharpeners

An electric knife sharpener spins internal abrasive wheels, usually across two or three grit stages, and sharpens a dull knife in minutes with almost no effort. That convenience is genuine, and for someone with limited hand strength or dexterity it can be the most practical option. 4. Honing and diamond steels

A "sharpening steel" is really a hone: it does not grind a new edge, it realigns the existing one. Every time you use a knife the fine edge rolls over microscopically, and a few strokes on a steel straightens it back true — which is why a chef steels a blade before carving. A traditional smooth steel only realigns; a diamond-coated steel goes a step further, removing a whisper of metal to refresh the edge as well as align it, which suits hard Japanese steel that a plain steel can struggle to bite. 5. Guided sharpening systems

A guided system clamps the knife and holds a stone on an adjustable arm, so you get much of the quality of freehand stone work while the jig keeps the angle consistent for you. Because the angle is adjustable you can match your blade exactly — a real advantage over pull-through and electric sharpeners — and set the roughly 15° per side that hard Japanese edges want. A note on bevels and angles

Two things decide how you sharpen: the bevel (the shape of the edge) and the angle. Most Japanese-steel kitchen knives — including our VG10 and AUS-10 blades — are double-bevel, ground on both sides, and that geometry takes a very keen edge at roughly 15° per side. This is a common point of confusion: double-bevel does not mean a duller knife.
