Our Mori Yanagiba stainless Steel 8-12 inch filleting knives are used to slice raw fish for Sashimi and Sushi are available in left and right-handed versions.
The name Yanagiba or Yanagi ba knife literally translates as ‘willow blade’. This describes the flexible nature of the long, narrow blade which adheres to the Japanese tradition of only being sharp on one side.
This right-sided bevel on the knife means it can only be used by right-handed chefs.
